The flower from which it is obtained is the Crocus sativus with a color that varies from lilac to purple. Inside its corolla there are 3 bright red threads from which the famous spice is obtained. Saffron is grown in spring and the flowers are generally harvested early in the morning when they are still closed. The limited number of stigmas produced by the flower and the particular harvesting phase have given it the name of "red gold". The unmistakable and elegant flavor as well as the richness of vitamins and the innumerable properties make it a spice much appreciated by chefs and gourmets. Using pure saffron is very simple, just let it dissolve in hot water for about an hour and then pour it into the dish at the end of cooking. It can be used in both sweet and savory dishes.
